Indisk gratinerad blomkål


Antal: 2-3 personer
Ugn: 225-230°C 

Ingredienser:

1 blomkålshuvud
1 gul lök
1 vitlöksklyfta
2 små chili (torkade)
2 buljongtärningar (grönsaks)
1 liter vatten
2 tsk olja
9 torkade curryblad
½ tsk hel kummin
4 myntablad (frisk)
1 lagerblad

Arbetsbeskrivning:

1. Börja med att ta bort bladen på blomkålen samt skär bort så mycket av stammen du kan i botten. Skär du bort för mycket så faller den isär vilket den absolut inte får så var försiktig.

2. Skala och skiva ned löken, skala och pressa vitlöksklyftan och lägg på en tallrik.

3. Häll 1 liter vatten i en stor tjockbottnad kastrull som du får plats att sätta ned hela blomkålshuvudet i. Ta nu i grönsaksbuljongtärningar, och lös upp ordentligt, 2 tsk olja, lägg i lök, vitlök, torkade chillin, currybladen, kummin, myntablad och till sist lagerbladet. Vätskan skall gärna täcka runt halva blomkålen.

Medans det kokar så blanda ihop yoghurt marinaden.


4. När det kokar så lägg i blomkålen, låt koka 7 minuter på ena sidan och när den tiden gått så vänder du på det och låter koka ytterligare 7 minuter. Efter koktiden lyft ur huvudet från kastrullen och placera i en lättoljad ugnsfast form.

Ingredienser Yoghurt Marinad:

1 dl grekisk yoghurt
1 vitlöksklyfta, skalad och pressad
1 tsk ingefära, färsk riven
1 tsk koriander (mald)
1 tsk garam masala
½ tsk chili pulver
½ tsk gurkmeja
saft av ½ lime
1 tsk olja
1 - 1½ tsk flytande honung
1 msk mynta, färsk (grovhackad)

Arbetsbeskrivning för marinad:

5. Ta fram en liten skål eller plastbunke, häll i den grekiska yoghurten, OBS använd inte någon jävla light eller hokus pokus utan helt vanlig. Skala och pressa ned vitlöken, skala ingefäran och hacka ned eller riv så du får ut en tesked och lägg i skålen. Grov hacka myntan och mät nu upp och blanda i alla övriga ingredienser. Ta nu denna marinaden och pensla på hela blomkålshuvudet som ligger i formen.

6. Grädda i mitten av ugnen ca 35 minuter på 225-230 graders ugnsvärme. De sista minutrarna (5) kan du gärna dra på varmluften. Den buljong som du kokade blomkålen i kan du låta stå och sjuda på spisen medans det bakas i ugnen.

7. Ta fram ett stort serveringsfast, häll nu endel av buljongen i botten, placera den färdiga blomkålen i mitten, häll över ytterligare buljong, dekorera med några mynta blad om så önskas och servera tillsammans med ett bröd.

Höstsallad med äpple och valnötter

En god och fräsch sallad att servera till rosmarinbröd.
 
Antal: 6 personer
 
Ingredienser:
 
100 g valnötter
 2 st äpplen, röda
1 st päron
 2 st avokador
 1 st lime, pressad saft
150 g sallad, blandad, t ex ekblad och grönsallad
 
 
Dressing:
 
2 msk balsamvinäger, vit
2 msk olivolja
1 tsk citronsaft
2 msk honung, flytande
1 msk vatten
1,5 krm salt
 1 krm svartpeppar, nymald
 
 
Tillagning
 
1. Rosta valnötterna i en stekpanna tills de fått lite färg. Låt svalna.
 
2. Kärna ur och skär äpple och päron i klyftor. Gröp ur avokadon och skär fruktköttet i bitar. Blanda frukt och avokado och pressa över limesaft för att undvika missfärgning.
 
3. Blanda ihop dressingen.
 
 4. Vänd ner salladen i frukten och häll över dressingen. Strö över valnötterna

Green Chicken Korma, Chicken Rizzala (Bhopal)


Rizzala is a little-known Muslim-style curry found in only two cities of India- Calcutta and Bhopal.
Its origin is possibly the latter, where it is a curry found only in the homes of the Muslim aristocracy.
A fresh herby curry, this can best be described as a green korma.

Serves: 4

Ingredients:

½ cup unroasted cashew nuts
6 tbsp oil
4 medium onions, chopped
2 large handfuls coriander leaves
½ cup mint leaves
4 green chillies
2 bay leaves
6 green cardamoms
3.5 cm piece of cinnamon
2.5 x 1.5 cm peeled ginger, finely chopped
4 cloves garlic, chopped
1 kg chicken, skinned, and cut into 8 pieces
1 heaped teaspoon coriander powder
½ tsp cumin powder
Salt to taste
1 tsp sugar
2 teaspoons lime or lemon juice
65 ml cream
1 tbsp oil, butter or ghee
½ tsp mace powder or 1 blade of mace

Method:

1.  Soak the cashew nuts in 200 ml of water, for at least 15 minutes.

2. Pour 4 tablespoons oil in a frying pan and fry the onions over a medium heat until they are crispy brown, but not burnt at the edges. This will take between 20-30 minutes, depending on the thickness of the pan and the heat.

3. When the onions are done, put in a blender with the coriander leaves, mint leaves, green chillies, soaked cashew nuts and 50 ml water and purée.

4. In the same pan, heat the remaining 2 tablespoons oil over a low heat, and add the bay leaves, cardamoms, cinnamon, ginger and garlic. Then increase the heat to medium, put in the chicken pieces and sauté in the aromatic oil for about 5 minutes until the chicken is seared. Now add the coriander and cumin powder. Sauté the chicken for 2 minutes, stirring so that the chicken doesn’t stick to the pan. Add the green purée and sauté the chicken for a further 2 minutes.

5. Add the salt, sugar and lime juice, and 200 ml water. Taste and adjust seasoning. Now bring to the boil and simmer until the chicken is cooked, then add the cream and stir well.

6. Just before serving, heat a little oil or butter in a ladle and put ¼ teaspoon of mace powder into ladle. After 10 seconds put it into the pot and stir. Alternatively, if using a blade of mace, remove it from the oil after 20 seconds and just put the oil in. Mix well.

Serve with flavoured rice, such as turmeric yellow rice or lemon rice.

Spinach with Curd Cheese




Serves: 2

Ingredients:

450 ml milk
100 ml live yogurt
salt
2 tsp lime or lemon juice
250 g fresh spinach or 1 small packet frozen spinach
2 green chillies, chopped
½ tsp chopped fresh ginger
2 tbsp oil
a pinch of fenugreek seeds
1 onion, chopped
1 garlic clove, chopped
¼ tsp cumin seeds
2 tomatoes, puréed

Method:

1. To make curd cheese, bring the milk just to boiling point, then add the live yogurt with a pinch of salt and the lime or lemon juice. Continue boiling for 7-10 minutes. The milk will separate. Remove from the heat and allow to cool.

2. Place a large strainer over a bowl and pour in the milk to collect the solids in the strainer, allowing the whey to remain in the bowl below. Keep the milk solids in contact with the whey until required for cooking. When ready to use, press down the solids in the strainer with a potato masher or the back of a large spoon to squeeze the moisture out or use a jelly bag or cheesecloth. You will get about 100 g curd cheese or paneer.

3. Cook the spinach with the chillies, ginger, a pinch of salt, and just a sprinkling of water if using fresh spinach. Cook uncovered so that the bright green colour is retained. (Salt is also required for retaining the colour.) When cool, purée in a blender.

4. In a frying pan, heat the oil and fry the fenugreek seeds for 30 seconds, then add the onion and fry until lightly coloured. Add the garlic and cumin, and after 30 seconds the tomatoes. Fry for about 5 minutes.

5. When the liquid from the tomatoes has evaporated, add the curd cheese and stir gently. Add the puréed spinach and cook for a couple of minutes. It is now ready to serve.

Red Chutney




Ingredients:

100 g grated fresh coconut
1 small onion, chopped
2 tsp chopped coriander
2 cm piece chopped ginger
1½ tsp red chilli powder
½ tsp cumin powder
2 garlic cloves
1 tsp sugar
3 tbsp tomato ketchup
6 dates, stoned
2 tsp lime juice
½ tsp salt

Method:

1. Put all the ingredients into a blender and grind to a paste.
